The Black Shtuff
Ingredients for Cold Brew
- 1150ml filtered water
- 850 grams of fresh ground coffee
Combine all ingredients in a glass jar, cover, and refrigerate overnight. The next day, strain through a coffee filter or muslin cloth, then transfer to a glass bottle for storage. This can be refrigerated for up to ten days.
Ingredients for the Cocktail Mix
- 40ml of Irish Whiskey
- 20ml of Coffee Liqueur
- 20ml of Guinness Sugar Syrup
- 10ml of Hazelnut Liqueur
- 120ml of Cold Brew Coffee
Ingredients for the Guinness Sugar Syrup
Combine one litre of Guinness beer with one kilogram of muscovado sugar syrup and gently heat until it reaches a boil. Allow it to cool, then transfer to a clear bottle and refrigerate.
Cream
- 30ml of Irish Whiskey Cream Liqueur
- 100ml of Fresh Cream
Pop into a small bottle and shake for 25 seconds
Lastly, mix everything together, put everything into a chilled glass and slowly pour the cream on the top of the cocktail.


The Pochard Potion
- Start with 10 organic limes, washed thoroughly
- Zest the limes and combine the zest with 200 grams of sugar. Let it sit for four hours
- After four hours, juice the limes and add the juice to the sugar and zest mixture
- Add two bags of jasmine tea, stir, and refrigerate overnight
- The next day, stir again, then strain everything well
- Add an additional 200 grams of sugar and 200 ml of fresh lime juice. Filter once more and transfer to a glass bottle
Storage: Keeps for up to one month in the fridge.
Ingredients for the Cocktail Mix
- 20ml Irish Whiskey
- 20ml Cognac
- 30ml Mandarine Liqueur
- 30ml Jasmine & Lime Cordial
- 10ml Peach Purée
- 250ml White Wine
- 300ml Mandarin & Bergamot Soda
In a shaker, combine Irish whiskey, Cognac, mandarin liqueur, jasmine lime cordial, and a splash of dry wine. Shake well, then pour into a jug filled with ice. Top with mandarin and bergamot soda water, and garnish with a slice of orange and a sprig of fresh mint.
