One of Dublin’s most iconic pubs has unveiled a seriously special release for Irish whiskey fans.
The Palace Bar on Fleet Street has launched an exclusive 25-year-old single cask Redbreast Irish whiskey, bottled at cask strength and aged entirely in a first-fill Oloroso sherry cask.
After 25 years of maturation, the cask yielded just 507 bottles at 57.6% ABV, making it one of the rarest Redbreast single cask expressions currently available on the Irish whiskey market.
A Rare Collaboration
The release was carefully selected by Master Blender David McCabe at Midleton Distillery, who worked closely with Palace Bar owner Willie Aherne to choose a standout cask.
Speaking about the collaboration, McCabe highlighted the shared heritage between the two institutions, noting The Palace Bar’s long-standing place at the centre of Dublin’s hospitality scene and its growing reputation for an exceptional Irish whiskey collection.

What to Expect in the Glass
According to McCabe’s tasting notes, the whiskey opens with rich aromas of dark fruits, figs and dates, layered with notes of leather, roasted coffee and dark chocolate.
On the palate, expect warming spices, soft oak tannins and hints of vanilla, alongside dried fruit and notes of cinnamon and nutmeg. The finish is described as long and complex, with pot still spices gradually giving way to the influence of the Oloroso cask.

The limited-edition release is priced at €770 per bottle and is available exclusively from The Palace Bar and via its online store.
