Two Michelin-starred chef Jordan Bailey has announced his latest venture – and it’s not one we were expecting. Bailey has officially launched a private in-flight dining brand, where he’ll be serving his food to passengers on private planes.
Launched in February 2024 after two years of planning, Odyssey is “redefining private aviation dining”. Drawing on Bailey’s experience sourcing the finest ingredients, his farm-to-table ethos, and knowledge of techniques from the world’s top restaurants, he states that they have “transformed in-flight private dining into something truly extraordinary.”
Odyssey has been operating in London for the past year, and is currently in the final stages of launching in Paris within the next couple of months, followed closely by the U.S.
Odyssey’s in-flight dining menu includes British cheese and charcuterie, fresh sashimi, nigiri and uramaki rolls, Cornish lobster rolls, mezze dishes and a dessert selection by Cedric Grolet




Jordan Bailey is one of Ireland’s most celebrated chefs, known for his dedication to innovation, artistry, and using the finest local ingredients. Originally from Cornwall, England, Bailey gained international recognition for his work in some of the world’s most prestigious kitchens, including the three-Michelin-starred Maaemo in Oslo, Norway, where he was head chef.
In 2018, Bailey relocated to Ireland with his wife and business partner, Majken Bech Bailey, to embark on a new culinary journey. Together, they opened Aimsir, a destination restaurant located at the Cliff at Lyons in County Kildare.
Just months after opening, Aimsir was awarded two Michelin stars in the 2020 MICHELIN Guide; the duo’s departure in 2023 was unexpected. Since leaving, Jordan Bailey has been working on several food projects, including a London-based smash burger pop up, whilst Sommelier Majken Bech Bailey has recently launched her own non-alcoholic brand, BÆK.
