On June 8th, two-Michelin-starred Dede will head to Dublin for a special one-day-only collaboration with Sister Seven at Fidelity, and the menu sounds seriously special.
Chef Ahmet Dede and Sister Seven’s Alex Zhang first worked together years ago at Chapter One, and now the two chefs are reuniting for an ambitious 8-course tasting menu inspired by the Silk Road.
The concept explores the natural crossover between Turkish and Chinese cuisine – from shared spices and techniques to fermentation and coastal ingredients – with both chefs bringing influences from their own backgrounds and home regions.
Ahmet draws inspiration from life and cooking in Baltimore, West Cork, while Zhang brings the flavours and seafood traditions of Dalian in Northern China into the mix


Ingredients and ideas will move between both kitchens, with foraged coastal elements from Cork meeting aged ferments, honey from the BIGFAN hives, and ingredients sourced through Fidelity’s creative collaborators.
The team says to expect something “deliberately different,” with dumplings, kebabs and noodles all making appearances across the eight courses — although exactly how the dishes will arrive at the table is being kept under wraps.
(Their teaser line: “Will you eat with chopsticks? Your hands? Or a knife and fork? We’re not telling.”)
There’ll also be a full drinks experience, including one-off cocktails, a welcome drink featuring foraged ingredients from Cork and the Phoenix Park, plus Turkish wines paired throughout the menu.
The evening will be soundtracked by experimental music collective Moving Still, adding to what feels less like a traditional dinner and more like a full immersive experience.
There’ll be just two sittings – lunch and dinner – with only 50 guests per service.
Tickets are €195 per person including eight courses and a welcome drink, with an optional cocktail and Turkish wine pairing available for €72.
