When we get sunny weather in Ireland, it is a gift we must treasure, and how better to celebrate than with a refreshing cocktail? This Lady Caroline cocktail is from the gorgeous Adare Manor, and uses a homemade rhubarb cordial. Give it a try and impress your friends!
Recipe
- Adare Manor Garden Gin – 40ml
- Lemon juice – 25 ml
- Rhubarb cordial* – 30ml
- Egg white – 25ml
- 6 fresh raspberries
*Cordial:
- Rhubarb – 450g
- Sugar – 300g
- Water – 300ml
Method:
- Put the sugar in a large saucepan with 300ml water and add 450g of rhubarb.
- Cook the mixture over a medium heat until the rhubarb is falling apart.
- Pour the mixture through a sieve lined with muslin into a clean heatproof jug, then transfer to sterilised bottles. Keeps in the fridge for one month.
For the cocktail:
- Add gin, raspberries, fresh lemon, rhubarb cordial and egg white to a shaker.
- Shake without ice for 10 seconds
- Fill with ice and shake hard until well chilled.
- Strain into a chilled Champagne coupe glass or martini glass.
- Finish with raspberries and mint.
