Chicken Loaded Nachos by The Daly Dish

Here’s a perfect Friday or Saturday night dish. After a long week, pop a movie on and dig into these. Even better when sharing. And there won’t be any leftovers, guaranteed.

Serves 4 | 424 kcals

Easy Chicken Goujons

  • Ingredients:
  • 2 chicken fillets, cut into strips
  • 30g panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tbsp lemon pepper (if you don’t have this, use sea salt and black pepper)
  • 2 eggs
  • Low-calorie spray oil

Method:

1. If you’re not using an air-fryer, preheat your oven to 190°C.

2. Grab two bowls. In the first bowl, mix the breadcrumbs with the garlic powder and lemon pepper. In the second bowl, beat your eggs.

3. Now to dip … Take a chicken strip and dip it in the egg, shake it off a bit, and then dip it into the breadcrumbs. Repeat this for all the strips.

4. Give the coated chicken strips a little spray of oil and pop them in the airfryer at 190°C for 20–25 minutes (shaking them a couple of times along the way). Or cook them in the oven for the same length of time, turning them halfway through.

Loaded Chicken Nachos

Ingredients:
• 200G of tortilla chips
• 4 cheese slices (easy singles)
• 30g cheese (whichever you prefer, I used Monterey Jack)
• 3 to 4 tbsp of guacamole
• 3 to 4 tbsp of sour cream
• Handful of sliced red and green jalapeños from a jar
• 1 Onion, finely chopped
• 2 Tomatoes finely chopped into cubes
• Chicken Goujons (see goujon recipe above)
• Frank’s Original Hot Sauce

Method:
1. First off cook your chicken as above, once cooked throw on a pan and add a good splash of Frank’s Original Hot Sauce, you want them fully coated. Place to the side.

2. Next up get your cheese slices into a saucepan and add in around 70ml of water on pop on a medium heat. Stir together until the cheese melts, once melted add in a good glug of Frank’s Original Hot Sauce. 

3. Load your tortilla chips onto a serving platter and sprinkle over your onion, tomato, chicken, jalapeños, cheese sauce and cheese. Pop under the grill and
allow the cheese to melt, add a generous few drops of Hot Sauce, guacamole and sour cream and serve up.
