Following on from the reveal of new and retained starred restaurants in MICHELIN Guide Great Britain & Ireland 2025, the MICHELIN Inspectors have announced their most memorable dishes of year, and Ireland’s very own Liath in Blackrock, Dublin, is amongst just three restaurants that made a lasting impression.
The MICHELIN Guide Inspectors eat thousands of dishes every year, but it was chef Damian Grey’s ‘Lobster, Bay, Caviar’ that stood out.

Speaking of why this dish was so memorable, the Inspector wrote that:
“Lobster and caviar scream luxury and are naturally delicious ingredients, but when you’re working with as beautiful a product as lobster, the key is to serve it with complementary accompaniments that enhance its flavour and never dominate it. That’s easier said than done, but Damien Grey showed all the necessary skill here, poaching the lobster to perfection and pairing it with a classical buttery sauce with a hint of acidity and a salty kick from the caviar. Not only was the dish delicious, but it stuck in my mind for the way it fitted into the wider tasting menu at the fabulous Liath.”
Liath has held two Michelin Stars since 2022 and is known for its seasonal surprise tasting menu.
