The latest bagel spot to hit Dublin is Beryle Bagels, a pop-up launched by husband and wife team Jake & Marissa Edgar. Jake is the head chef at Meagher’s Bar on Eden Quay in Dublin’s city centre.
While it doesn’t have a physical store (not yet!), you can order freshly baked bagels for collection in Dublin city centre via Instagram DM.
Ahead of her monthly restaurant recommendation column (At the Table with Dee Laffan – Your Restaurant List For December), Dee Laffan chatted to Jake about how the idea for Beryle Bagels came about…
Why bagels? I am a professional chef so making something we couldn’t find locally for ourselves was easy enough. We noticed a lot of momentum and buzz about bagels locally as well and started a little microbakery out of our apartment for friends and it just continues to snowball in the best way.
The name: We wanted a Yiddish name to honor our Jewish heritage and the origins of bagels. Ber means bear in Yiddish and Beryle means little bear, like a diminutive. We honestly just like the alliteration and branding possibilities with the bear iconography and went with it.
Why boiled? A traditional NY style bagel is boiled before baking to create a very unique texture which a steamed or simply baked bagel lacks. We wanted to create the most authentic product we could, and consider our brand a sort of bagel purist company. We don’t plan to be too creative with our flavours or varieties, and would rather focus exclusively on quality and consistency.
Long term goals: We hope to open a brick and mortar deli for our bagels one day. We’ll be able to make our own smoked salmon and increase production while maintaining quality.
