Historic Pullman Restaurant at Gleno Abbey Hotel & Estate, featuring two original carriages from the Orient Express, will reopen on March 1st after a stunning refresh and will offer an “elevated dining experience” led by Head Chef Angelo Vagiotis.
The Restoration has preserved many of the carriages’ original details, including the intricate wooden marquetry and the original brass light fittings. Simultaneously, the updated interiors now showcase a hint of nostalgic glamour.
Glenlo Abbey Hotel & Estate is one of Ireland’s most luxurious hotels, a proud member of Ireland’s Blue Book, small luxury hotels, and part of the Irish-owned and managed MHL Hotel Collection. It is just two miles from Galway City and boasts magnificent views overlooking Lough Corrib on a 138-acre estate.
A Greek native, Head Chef Angelo has experience working in the U.S. and across Europe, spending time at the renowned Noma in Denmark and the prestigious three-Michelin-starred Manresa in California. He was also part of the opening team for Vincent Crepel’s Terre in Castlemartyr, Co. Cork. His culinary style focuses on the highest quality produce, sourced locally whenever feasible and skilfully prepared- though not always in a simple manner.
Angelo’s cooking embodies a deep respect for classic techniques, filtered through his and his team’s unique interpretation. Angelo and his dedicated team have created a unique seven-course tasting menu that marries classic cuisine with the rich bounty of Ireland’s evolving terroir, reflective of the seasons and available for enjoyment from Wednesday to Sunday evenings aboard The Pullman.
Sample dishes on the new Tasting Menu include Turbot with Champagne, Trompette mushroom and mussels from Connemara, and Venison from The Burren with preserved berries and Kampot pepper

The new seven-course tasting menu features “exquisite seasonal dishes that will take you on a culinary journey”. The menu changes with the seasons, and some dishes may be available only for one day. It is priced at €130 per person from 6pm to 9pm. and is open weekly from Wednesday to Sunday (closed on Monday and Tuesday)
Angelo commented on The Pullman’s new tasting menu, “The menu emphasises the changing seasons and our close relationships with local food purveyors. At its heart, The Pullman showcases time-honoured traditions in an elevated yet inviting space where food, drink, and atmosphere combine to create a transformative dining experience.”
Ian McDonnell, the newly appointed manager of Pullman Restaurant, will guide the onboard dining experience. Before embracing this exciting new role, Ian was the Assistant Food & Beverage Manager at the five-star Carton House, where he oversaw The Morrison Room, which earned its first Michelin Star during his tenure.
