Wonderfully fruity and floral, this Dingle gin and tonic cocktail is a perfect twist on a classic recipe. The thyme syrup works wonderfully with Dingle gin and the frozen blackberries offer a twist to an ice cube that adds another depth of flavour. Perfect for these sunny Autumn days.
Ingredients
– 1 bunch of fresh thyme
– 1 cup of sugar
– frozen blackberries
– Dingle Gin
– tonic
Method
1. First prepare your thyme syrup, mix the cup of sugar with a cup of water in a pan and heat until dissolved. Then turn up the heat and add the thyme. Bring to the boil.
2. Once boiled for 10 minutes remove from the heat and cool.
3. In a couple of glasses add some blackberries, fresh thyme as well as a splash of thyme syrup. Then add gin and tonic to taste.
4. Stir and enjoy!
