This month, La Côte seafood restaurant in Wexford in hosting a charity tasting menu in aid of the Irish Hospice Foundation.
Taking place on September 16th, La Côte’s Paul Hynes will be working with talented Australian raised and Filipino born chef Arnold Josue, to create an incredible 6-course tasting menu with wine pairings.
Paul and Arnie worked together in Dublin’s L’Ecrivain and are excited to be back in the kitchen together. The event is being held in honour of Arnie’s friend Frank Finnucane, who suffered with spinal cancer for 8 years.
Sadly, he passed away at the age of 39, a week before his birthday in December. Speaking about the event, Arnie said:
“This charity dinner is for the Irish Hospice foundation that tirelessly cared for my mate Frank Finnucane. He suffered with spinal cancer for 8 years. He was only 39 and he passed away in December a week before his birthday. This charity dinner is about more than just raising money for an incredible foundation, but also remembering an amazing friend and letting him know that just because he is gone, not a day goes on where we won’t remember him.”
Paul added: “We are really excited to be holding this great event and we know it will be something very special for Wexford. And personally, I am delighted to have Arnie in our kitchen with the chance to cook beside him once again.”
The tasting menu will be heavily influenced both by Arnie’s broad experience and also the fantastic produce available in Wexford.
