One of Dublin’s most loved dining rooms is setting the stage for a very special collaboration this winter. Pichet has announced the next instalment of its celebrated Friends of Pichet series, welcoming Executive Head Chef Liam Finnegan of the world-renowned Ashford Castle Hotel for a one-night-only tasting menu on Sunday, 22nd February 2026.
This exclusive event will see two of Ireland’s most respected chefs — Pichet’s Executive Head Chef Harry Quinn and Ashford Castle’s Liam Finnegan — come together to create a six-course tasting menu that celebrates the very best of Irish produce, craftsmanship and seasonality.
What to Expect on the Night
Guests can look forward to a beautifully curated six-course tasting menu, beginning with an elegant selection of canapés and progressing through standout dishes such as cured organic trout with potato bread and elderflower, turbot with carrot and lobster, and beef with artichoke, slow-cooked cheek and béarnaise. Desserts include a refreshing Black Velvet sorbet followed by a dark chocolate mousse with blood orange.
Wine pairings will be available to complement each course, alongside the warm, polished hospitality Pichet is known for.

The Friends of Pichet series has become a highlight of Ireland’s culinary calendar, bringing together chefs who share a common philosophy around food, creativity and hospitality.
Founder Stephen Gibson explains:
“We started these events so that we could collaborate with chefs who share our values and love of fresh food and creative ideas. It’s been incredible to see how the series has grown, and we’re delighted to welcome Liam from Ashford Castle for what promises to be a very special evening.”
Chef Harry Quinn adds:
“These dinners are all about creating unforgettable moments for our guests. Working with chefs like Liam, who share the same passion for produce and cooking, is what makes the Friends of Pichet series so special.”
