This is a great recipe for the whole family to enjoy or a perfect one for batch cooking so that your breakfast is ready to go for the week ahead. The slices make a delicious snack with a cup of tea or coffee. They’re so easy to make, and you can throw in whatever flavours you like. They will keep in an airtight container in the fridge for up to five days.
Make 6 slices
160 kcal / 7.5g protein per slice
Ingredients:
- 1 medium-sized very ripe banana
- 120g porridge oats
- 2 eggs, beaten
- 200g fat-free Greek yoghurt
- 2 tsp baking powder
- 2 tsp instant coffee
- 8 tbsp pecans
- 1–2 tbsp sweetener, according to taste
- Vanilla yoghurt or cream, to serve
Method:
- Preheat the oven to 190°C/170°C fan/gas mark 5.
- Mash the banana with a fork, then add all the other ingredients (except the vanilla yoghurt or cream) and mix together.
- Line an oven dish (17 x 27 cm) with baking paper.
- Spoon the mixture into the oven dish and cook for 40 minutes in the centre of the oven.
- Once cooled, cut into 6 slice. This is lovely served with some vanilla yoghurt or cream.
