It’s hard to describe how good this chocolate brownies recipe is. They’re super chocolatey with that amazing, fudgy texture that the best brownies always have. These are at their best when you let them go cold before slicing, then gently reheat in the microwave.
Ingredients – Makes 12
— 170g butter
— 170g dark chocolate, broken into pieces
— 260g golden caster sugar
— 4 eggs
— 1 teaspoon vanilla extract
— 70g plain flour
— 30g cocoa powder
— 45g white chocolate, chopped
— 45g milk chocolate, chopped
1. Preheat the oven to 170°C and grease and line a 20cm square brownie tin with baking paper.
2. Put the butter and chocolate into a heatproof bowl over a small pot of simmering water until the chocolate melts, stirring occasionally. The bowl should sit above the water, not touching it.
3. In a separate bowl, whisk the sugar and eggs together until fluffy and turning a pale colour, then add in the vanilla. Sieve in the flour and cocoa powder, then add in the melted chocolate and fold it all together.
4. Pour into your prepared tin, smooth over the top, then sprinkle over the chopped chocolate pieces. Transfer to the preheated oven and bake for 25–30 minutes – there should still be a bit of a wobble in the centre when you remove the tin from the oven. Allow to cool for about an hour, until just warm, before slicing.
CHEF’S NOTE: As good as these are on their own, topping them with a scoop of the popcorn ice cream on page 156 and a generous drizzle of caramel sauce really takes this chocolate brownies recipe to the next level.
