An exclusive series of dining experiences takes place in the beautiful Morrison Room at Fairmont Carton House this August, curated by Jordan Bailey and Majken Bech-Bailey. Partnering with the team at The Morrison Room, Jordan will be taking the helm in the kitchen, creating a tasting menu featuring the very best of local, Irish produce, while Majken will curate the guests’ journey, sprinkling her magic on every aspect of each diner’s experience from the welcome drink to the dining experience right through to the petits fours.
Jordan and Majken are the dynamic young husband and wife team behind Aimsir, the fastest straight to two-Michelin stars in the Great Britain and Ireland Guide, who are now currently operating their own unique hospitality and events consultancy, Bech-Bailey.
A spectacular dining room, The Morrison Room will make for the most dramatic backdrop to these special evenings, taking place each Wednesday, Thursday and Friday in August, from 2nd August through to Friday 1st September. When it was added to The Michelin Guide earlier this year, The Morrison Room description read “We all need a little glamour in our lives, and this restaurant within the vast, luxurious Carton House resort provides it in spades. The room is gloriously showy and boldly ornate; this is certainly dressing-up time.”
The tasting menu designed and delivered by Jordan and Majken Bech-Bailey and The Morrison Room team, lead by restaurant manager Marie Soudain, will be €150 per person, with a drinks pairing available for €80, and bookings will go live on 20th July. Overnight experiences will be available from €550 for dinner for two people with an overnight stay in a Garden Wing Room, and from €750 for dinner for two with an overnight stay in a Manor House suite.
Carton House, A Fairmont Managed Hotel, is in Maynooth, just half an hour from Dublin. It reopened in June 2021 after a two-year, multimillion-euro renovation and reimagining of the original house, surrounding hotel and stunning grounds and parkland. The refurbishment put the spectacular Palladian-style mansion, The Manor House, at the heart of the guest experience, with the particularly special addition of The Morrison Room, a spectacular room which has been transformed into the resort’s fine dining restaurant and morning breakfast room.
