An exclusive one-night dining experience takes place in the beautiful Morrison Room at Carton House, a Fairmont Managed Hotel, on 25th April when Head Chef Adam Nevin teams up with Killian Walsh, Head Chef of Bastible in Dublin.
Maynooth native Adam first met Wexford born Killian when they were both working in London eight years ago and they have been firm friends ever since. They’ve spoken many times about working and cooking together so they’re really excited to create a very special evening for guests of The Morrison Room.
Adam and Killian will work on different courses on the evening, while also bringing their different cooking styles together to ensure a flowing, interesting and delicious menu. Both chefs are keen foragers so they’ll be picking some fantastic fresh and seasonal ingredients from the grounds and surroundings of Carton House Fairmont. Dinner will be €140 per person, with an optional wine pairing available for €95.
A spectacular dining room, The Morrison Room will make for the most dramatic backdrop to this special evening. Described by The Michelin Guide as a “breathtaking room” with it’s high curved ceiling, Greek Corinthian columns and ornate plater cornicing, Adam Nevin’s menu “showcases fine Irish produce in well-judged and original combinations with a confident classical base”. Killian is also a fan of using the best Irish ingredients he can get his hands on in Bastible, which is described by The Michelin Guide in similarly glowing terms:
“The modern set menu features top class Irish ingredients at the height of season and each main ingredient is given the space to shine. Dishes are stripped-back, flavours are bold, and servings are generous: this is cooking that comes from the heart.” There’s sure to be fireworks, in the best possible way, when these talented chefs come together under the stunning roof of The Morrison Room on 25th April.
