The Mercantile Hotel & Bar, on 28 Dame Street, has been a landmark since 1835 and will re-open its doors this May following a five year renovation, with a new bar and restaurant onsite.
The new hotel design is described as “Georgian elegance meets contemporary Dublin” and is full of character – drawing inspiration from 19th century commerce and exploration, to bring out a new fun and vibrant hotel personality.
New features include:

Stephen Gibson is an established Head Chef with over 30 years of experience. He is most well-known for founding French restaurant Pichet, as well as having an integral role in Café en Seine, both run by the Mercantile Group. Stephen has worked abroad in France, London and Sydney.
The significant conservation and redevelopment of The Mercantile Hotel & Bar preserves its architectural heritage which can be seen in the refurbishment of the original façades, the restoration of the sash windows and removal of modern alterations to reveal the buildings’ true Georgian character.
