This spicy potato wedges recipe make a delicious snack or appetiser.
Serves 6
Ingredients:
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 1 tbsp paprika
- ½ tsp chilli powder
- 4 tbsp olive oil
- 1kg/2 lb 4 oz potatoes, scrubbed
- 2 shallots, finely chopped
- 1 tbsp chopped fresh coriander
- sea salt
- sour cream and sweet chilli sauce, to serve
Method:
- Preheat the oven to 200°C/400°F/Gas Mark 6. Line the base of a large baking dish with non-stick baking paper.
- Combine the spices in a large bowl. Add the oil and mix well to combine.
- Cut each potato into six wedges, add to the bowl and toss to coat with the spices.
- Arrange the potato wedges in a single layer in the prepared dish and sprinkle generously with salt. Bake in the preheated oven for 45 minutes until tender and crisp.
- Transfer to a large serving bowl. Top with the shallots and coriander and serve with sour cream and sweet chilli sauce.
