We like to let great ingredients speak for themselves at 28 Darling St and this dish does exactly that. Light, fresh, packed full of flavour and ready in less than half an hour it works as a starter or as a larger meal. It has gone down a treat with customers in the restaurant and has become a firm favourite.
28 Darling St is Fermanagh’s newest restaurant. Brought to you by husband and wife team, Glen Wheeler and Zara McHugh it offers the perfect atmosphere to relax, laugh and enjoy a memorable dining experience with friends and family. INGREDIENTS
- 360g arborio rice
- 2 tbs olive oil
- 1 onion finally chopped
- 1 garlic clove finally chopped
- 1 1/2 ltrs of boiling veg stock
- 80g mascarpone
- 1 lemon zested
- 200g smoked salmon sliced
- 50g grated parmesan
- Basil/ dill / parsley
METHOD
Gently fry the sliced onion and garlic in the oil for 3-4 mins and then add the rice stirring continuously. Pour in a third of the veg stock and slowly cook for 15mins stirring until the rice has observed all the stock. Add 1/2 of the remaining stock and carry on cooking, stirring more frequently until the rice has absorbed the stock.
Slowly add the last of the stock and cook until almost creamy texture then remove from the heat, add the mascarpone, lemon zest, herbs, smoked salmon sliced and stir gently. Add the grated Parmesan and once last stir and it’s ready to serve. Garnish with basil leaf or parsley and a drizzle of olive oil. Enjoy!!
