Executive chef of The Rose Hotel, Odran Lucey, executive chef of The Marker Hotel, Gareth Mullins, executive pastry chef and executive chef of The Merrion Hotel, Paul Kelly and Ed Cooney will come together on the 5th April 2019 to cook a five-course meal at The Rose Hotel to raise funds for Recovery Haven Kerry Cancer Support House.
The evening will kick-off with snacks created by the students from IT Tralee with all ingredients sourced from Taste Kerry producers and welcome drinks, followed by a special menu prepared by the four chefs. Ed Cooney will begin with a crispy fried hen egg with asparagus and Caesar dressing while the fish course is in the hands of Odran Lucey and the team at The Rose Hotel who will be serving a spa crab meat tian with apple, ginger and seared tuna loin.
Main courses will include a choice of slip sole meunière by Ed Cooney or fillet of Irish beef with roast onion puree and beef rib and foie gras bons bons by Gareth Mullins, and dessert course by Paul Kelly will be a surprise “Tralee Rose” followed by an Irish cheese course. Each course on the evening will be accompanied by a selection of wines sponsored by The French Market.
The team of chefs behind this worthy event first worked together 20 years ago in The Merrion Hotel and have remained firm friends over the years. Speaking about the event, The Rose Hotel’s head chef Odran Lucey said “It’s important to us all to give something back, to highlight the good food on our doorstep, the positives of our profession and help our chosen charity.”

The evening will be hosted by Elaine Kinsella of Radio Kerry and music will be provided by Celebration for those who wish to dance the night away after dinner. There will also be a range of spot prizes including a weekend in the Fairmount St. Andrews in Scotland with a round of golf as well as overnight stays at The Merrion Hotel and The Marker Hotel.
