This has become a great family favourite. It’s one of those “throw in the bowl and mix together bakes” very easy and no fuss. I like to call it a kid friendly recipe because it’s a huge hit with my kids and my 12 year old has made it himself a few times. If you are partial to a Ginger Biscuit like me you will love this! The lime “Spices” things up a bit and of course the Chocolate just finishes things off nicely.
Ingredients
175g butter, softened
175g dark muscovado sugar
250g self-raising flour
100g golden syrup
1 level tbsp. ground ginger
1/2tsp mixed spice
4 medium eggs beaten
Stem or crystallised ginger, to decorate
Grated Lime Zest
2tsp Lime Juice
200g Melted Dark or Milk Chocolate
Method
Set the oven to 180°C & line a 18 x 28cm (7 x 11in) tray bake tin, with baking parchment
Put the softened butter into a bowl and add the sugar, flour, syrup, ginger, mixed spice and eggs. Beat the mixture until smooth. Spoon the mixture into the lined tin.
Bake in the centre of the oven for 30-40 mins, or until just firm to the touch in the centre.
Remove tin from the oven and leave to cool for 10 mins.
Transfer to a wire rack and lift out to cool completely.
Melt the Chocolate and pour over Cooled Bake, (I always put the cooled bake back into the tin to do this – much easier) and leave to set. Top with Lime Zest and some Stemmed Ginger and cut into squares.
