Ingredients
- 300 grams Giant Pearl Couscous
- 5 grams Turmeric powder
- 20 grams Dill Chopped
- 20 grams Parsley Chopped
- 20 grams Mint Chopped
- 125 grams Golden Raisins
- 100 grams Pomegranate Seeds
- 30 ml rapeseed oil
- 3 lemons juiced
- 1 lemon zested
- 10 grams Sea salt
- 2 grams Black Pepper
Instructions
- Add turmeric powder to a large pot of boiling salted water. Add couscous & cook until al dente to the tooth. Drain & let cool. Drizzle with a little oil to stop it from sticking.
- Add all the herbs, golden raisins, pomegranate, lemon, rapeseed oil & seasoning & mix well to combine everything together.
- Taste & adjust consistency if required.
