The Shelbourne celebrates the Irish oyster every September when the best season for the finest bivalves officially begins, and this year is no exception with some deliciously tempting oyster dishes and interesting drinks pairings.
With daily specials for oyster season at The Shelbourne of a half dozen oysters with a classic mignonette dressing and lemon, fresh from Irish waters (€21) or a zesty option of ponzu oysters with chilli and spring onion (€21), enjoy them with a glass of Laurent-Perrier Champagne (€25) or a pint of Guinness (€6.80).
The Shelbourne’s award-winning sommelier, Nisea Doddy has created some perfect pairings for the dishes on the oyster menu – for the half dozen oysters Rockefeller (€22), Nisea suggests the Domaine Le Verger Chablis (€56 per bottle) or for the smoked oysters with a bloody mary sauce and summer herbs (€21), she likes to pair with New Zealand’s finest, Greywhacke Pinot Gris (€68 bottle).
Another exquisite pairing available for oyster season at The Shelbourne during September is the classic combination of native oysters from Flaggy Shore, Carlingford, Galway Oysters and Kelly’s with Imperial Caviar (€275) matched with the sublime Laurent-Perrier Grand Siecle (€225 for a bottle).
This year, the excellent bar team at The Shelbourne have also created a signature cocktail to add extra flavour to proceedings. The Grande Dame, with PAMA liqueur, Côte De Provence Rosé, peach, jasmine soda and Laurent Perrier Champagne, is a refreshing, light and luxurious accompaniment to the finest oysters
