The perfect weekend breakfast or brunch, this buckwheat pancakes recipe will have you asking for more. They are made with buckwheat flour to make them gluten free, but they’re still fluffy and absolutely delicious. The addition of the caramelised bananas elevates these pancakes – they’re so simple to make, we hope you give them a try.
Ingredients:
- 2 tbsp butter
- 135g buckwheat flour
- 2 tbsp honey
- ½ tsp baking powder
- ½ tsp baking soda
- 300ml buttermilk
- 2 eggs
- 1 tsp vanilla extract
- 2 bananas, sliced
- Caramel sauce
Method:
- In a medium bowl, mix together the dry ingredients.
- Add in half of the honey, the buttermilk and the eggs and mix until no dry spots remain, making sure not to over mix.
- Add some butter into a pan on medium heat until it melts, then ladle in some of the pancake mixture until bubbles form and pop, about 2 mins.
- Flip over and cook for another 1-2 mins.
- Once the pancakes are ready, melt the remaining butter in the pan and add in the sliced bananas and the rest of the honey.
- Cook until the bananas are caramelised, 2-3 mins, then flip and cook on the other side for an additional 1-2 mins.
- Serve the pancakes with the caramelised bananas poured on top, and drizzle with caramel sauce.
