Serves: 3-4, starter portions |
Ingredients: 1 x kg chicken wings, free range if possible 100 ml olive oil Sea salt Black pepper 1 tablespoon Korean chilli paste (Gochujang) 1 tablespoon honey 1 tablespoon soy sauce 1 tablespoon rice wine vinegar 1 tablespoon sesame oil 1 tablespoon minced garlic 1 tablespoon minced ginger 1 tablespoon minced lemongrass Method: Pre-heat oven at 240C. Season chicken wings with sea salt & black pepper & toss with olive oil until well coated. On a large oven tray lined with parchment paper, arrange the chicken wings in a single layer, do not over crowd. Bake in the oven until very crispy. Approximately 40 minutes. Make sure they are very crispy. Mix together all the ingredients for the sauce, until well combined. Once the chicken is crispy, drained off any excess fat & put into a large bowl. Add the Korean sauce & toss together to coat very well. Add sesame seeds, coriander & peanuts to garnish the plate. Serve with fresh lime wedges, enjoy! |
