56 Central is the new go to spot for food lovers in Galway City. Combining an industrial style interior with a chilled out atmosphere and the best of local produce, 56 Central has quickly established itself on the foodie map since its opening in May.
The décor is something to behold. The core elements were all recycled or up cycled by using raw natural materials so 56 Central has created a very unique space for diners to relax in. The minimalistic setting creates a cool Scandinavian vibe, while scaffolding divides dining areas into more private booths. They even have an original piece of the Galway Wall.
Owner Gill Carroll says “We wanted to create something very different at 56 Central. I worked in Lynch’s; it’s where I started my career at 16 but knew that I needed to put a new stamp on this iconic building. 56 Central is all about connections, with food, art, culture and people. I love interiors and design, so really wanted to create a space that would almost awaken the senses.”
When it comes to the food, 56 Central are all about local produce and local suppliers. This is evident across all their menus with key producers and local produce highlighted at every turn. They offer up West Coast Seafood Chowder, Chicken Liver Pate with Castlemine Bacon, a crispy pancetta and creamy Galway Goat Farm Goats cheese salad, Colleran’s Meats and fish from Ali’s Fish Market.
The 56 Brunch is all about great eggs, smashed avocado on sour dough, chilled music by the resident DJ and elderflower prosecco cocktails for those that fancy a tipple. So from breakfast to dinner and everything in between, 56 Central will have Galwegians flocking through its doors to experience this unique setting.
