Growing up, I only ever visited the Boyne Valley on school trips. Back then, it was all about lore, legends, and history, learning about high kings, Vikings, and ancient tombs. I remember wandering around Newgrange in my itchy school jumper, half-listening to the guide while waiting for lunch so I could scoff my jam sambos.
Just in case you weren’t paying attention in school and need a refresher, the Boyne Valley encompasses counties Meath and Louth. It is part of Ireland’s Ancient East and is home to monuments older than the Egyptian pyramids, hence the school tours. But these days, it’s also a hub of creativity and is home to some of the country’s finest food producers and craftspeople.
