The Constitution Dining Experience at The Shelbourne — a bespoke dinner in the hotel’s most storied room during the centenary year

Private dining at The Shelbourne is an immaculate, candle-lit experience in some of the country’s most beautiful and historic rooms. One of those rooms is The Constitution Suite at the hotel, which in 2022 celebrates hosting its most impactful and significant meeting — the drafting of Ireland’s first Constitution one hundred years ago in 1922.

Under the chairmanship of Michael Collins, the Constitution Committee met in room 112 at The Shelbourne to write the Constitution of the Irish Free State. This room is now The Constitution Suite, still furnished with the original table around which the committee members met to draft Bunreacht Shaorstát Éireann.

To celebrate the centenary of Ireland’s first Constitution, The Shelbourne is offering a unique private dining experience in The Constitution Suite, complete with historical introduction, musical accompaniment by a harpist and a carefully designed and evocative menu, full of classic dishes chosen to reflect the era.

With the original antique table and chairs used by the drafters of The Constitution, luxurious silk wall coverings, crystal chandeliers and views overlooking St. Stephen’s Green, a private dinner for a group of guests in The Constitution Suite — any number from ten to twenty-four can be seated comfortably — is impeccably delivered with all the care and drama of formal service which would have been recognisable at any stage in this hotel’s grand history.

The menu showcases recipes and dishes inspired by times gone by too, delivered in inimitable Shelbourne style by executive chef Garry Hughes and his team — a consommé en croute, chicken terrine, a Star Gazey fish pie, roast lamb with a Madeira jus and a Cox’s apple tarte fine with vanilla ice cream — all timeless classics. The accompanying wines selected by award-winning sommelier Nisea Doddy are equally storied, from the famous sherries of Jerez to some of the great wines of Burgundy and Bordeaux.

Since 1824, The Shelbourne has been a gathering place for the great political, cultural, literary and artistic figures of the time. There are nearly two centuries of stories contained under this hotel’s roof, and new chapters are being written every day.
