Marcel’s are excited for the coming 6 months and are looking to focus on seasonal products and recipes, along with craft-made ingredients such as homemade cordials.
As well as seasonal ingredients, they’ve been quite playful with some of the more quirky spirits often overlooked by customers in Ireland, such as sherry, white port and over-proof rum. Marcel’s Bar also love to have some fun with Tiki cocktails.
Bartender Leon kickstarted his career in Dublin at the Liquor Rooms during its first three years, during which the bar won various awards, including Best Cocktail Venue and Best Bar Team. He later headed the bars at Angelina’s and was with Farrier & Draper before moving to Marcels.
A real student of the trade, Leon is all about creating something unique and innovative. He said: “We are the facilitators for letting the customers try something they have never tried before.
We are like cooks in how we engage with creating new sensory experiences. Our biggest hope is that the customer will leave the bar in a better mood than when they first entered.”
