Smoked salmon and Guinness are two of our favourite Irish creations, so the news that the two iconic products are now combined into one makes us very happy indeed.
Kish Fish – a family-owned seafood business in Howth with more than 60 years of experience – has announced its latest product: GUINNESS™ Smoked Salmon By Kish Fish.
The Salmon is skilfully hand-filleted in-house by the team at Kish Fish, cured in Guinnness, and then sustainably smoked over oak in their Smokehouse on Howth harbour – an entirely handcrafted production process that results in a meltingly tender Salmon with a smooth mellow taste and subtle undertones.
The salmon is cured with Guinness, miso, soy sauce, and other secret ingredients



After a few hours, the fish is flipped by hand in order to achieve an even cure throughout.
The Salmon is then placed onto drying racks, where it is given time to fully absorb the umami-rich flavours. From start to finish, the whole process between curing and smoking can take up to 72 hours to complete.
The initial idea for the uniquely Irish product began life in the Guinness Storehouse, one of Kish Fish’s largest customers. A couple of years ago, the Storehouse’s executive chef, Sean Hunter (of Aramark), began curing Salmon in GUINNESS™ and smoking it himself in very small quantities for tourists to enjoy as part of the visitor experience at St. James’s Gate.
Having noted the product’s potential and mass appeal, GUINNESS™ partnered with Kish Fish to further finesse the recipe and use their smoking expertise to develop a GUINNESS™ Smoked Salmon that could be crafted on a much larger scale for wider distribution – a process that they have patiently perfected at their Smokehouse in Howth over the course of the last two years.
Airfield Estate, Guinness Storehouse, InterContinental Dublin, Matt The Threshers, Mountain View Kilkenny, and The Shelbourne Hotel are some of the first venues to proudly serve GUINNESS™ Smoked Salmon By Kish Fish on their restaurant menus.
