The Roe & Co Whiskey Distillery, located in the heart of Dublin 8, is delighted to announce another summer of its hugely popular Summer Garden Experience, welcoming four exciting restaurants to the luscious outdoor surrounds of the Roe & Co Distillery Power House Garden – El Milagro, Street by Sunil, The Salt Project and Socafro Kitchen.
Roe & Co whiskey is all about collaboration and the summer lineup for 2024 reflects that. Running from June to September each restaurant will devise a unique tasting menu for their month-long residency and work with the team at Roe & Co to create paired custom-crafted Roe & Co whiskey cocktails. Expect plenty of rich and diverse flavours as each takeover represents a different culinary tradition, from Mexican to Indian and Irish to Afro-Carribean, all joined by the passion for bringing forth their cultural culinary roots to create meaningful dining experiences.
Friday the 7th of June marks the first day of the pop-up, where guests can book a table to explore El Milagro, followed by Street by Sunil (the founder of Pickle) in July, then The Salt Project in August, and lastly Socafro Kitchen in September. Bookings for full the full Summer Garden season are now open via OpenTable and limited seats are available so whether you’re looking to head out on date night, catch up with your friends or do something different after work, the Roe & Co Distillery Summer Garden Experience promises a unique dining experience you won’t want to miss.
El Milagro – 7th to 29th June
Roe & Co are delighted to welcome El Milagro to kick off the Summer Garden pop-up series with a bright menu of authentic Mexican dishes brought to you by Julian Trejo Pascual and his mother, Maribel who are originally from Mexico City. El Milagro combines traditional Mexican cooking, sauces from scratch and tortillas made from native Creole corn along with the best of Irish ingredients. Julian comments, “We’re very excited to bring you a very special menu showcasing some of our favourite Mexican classics from our pop ups, as well as some new creations we’ve been working behind the curtains for a little while. Come and celebrate the authentic flavours of a Mexican summer, paired with some delicious Roe and Co bespoke cocktails for this menu. This menu is inspired by the authentic flavours we grew up with in Mexico, while adding a little of our own twist and creations.”
The flavours of their dishes will be accompanied by curated cocktails including a Roe & Co version of the famous Mexican staple, horchata – a popular drink enjoyed on hot days with spicy food that has slightly sweet and nutty flavour along with hints of cinnamon, sesame seeds and coconut. Since 2021, El Milagro has been serving up the best of their Mexican recipes in popular bars and local markets throughout Dublin along with regular pop-ups in Hen’s Teeth and Herbert Park Market.
Street by Sunil – 4th to 27th July
Multi-award winning chef Sunil Ghai, of Pickle restaurant fame, will take over the Summer Garden in July, and with wife Leena, will bring a focus on traditional recipes from their childhoods in India. Sunil is always looking to bring his favourite recipes & dishes to the Street menu, saying “I always wanted to open something small for family gatherings where people can get together with their nearest and dearest and have fun while the team at Street look after them like a family at home.”
At Street, a super team of chefs have come from different regions of India with a burning passion for cooking as they’ve spent many years perfecting curries, biryanis, tandoori breads and kebabs, roasting spices and making spice mixes. They know the importance of flavour and make all the pickles and chutneys in-house. Well known for his expertise on spice, Sunil will be working closely with Roe & Co bartenders to develop cocktail pairings that will incorporate Sunil’s unique spice collection and Streets homemade lassis recipes.
The Salt Project – 1st to 24th August
Founded by Kildare-based Chef, Caomhán de Bri takes a fresh new approach to street food with his nomadic food trailer that has travelled coast to coast popping up in scenic locations all over Ireland. Caomhán has worked in professional kitchens for over a decade, including a year in London in Gordon Ramsay’s Michelin-starred restaurant, Maze. Having grown up with a huge appreciation and respect for food, passed down to him by his parents, Caomhán’s menus have always had a strong focus on food provenance.
Commenting on his menu, Caomhán said, “ The dining experience in collaboration with Roe and Co has been created and inspired by the deep history of our wonderful capital city and how our food and drink culture has developed throughout the centuries”. Visitors to The Salt Project can expect an offering that consists of a series of Blaisíní (small bites) dishes that have been specially designed to showcase locally grown and artisan ingredients from small scale producers specific to each region.
Socafro Kitchen – 29th August to 21st September
Socafro Kitchen, a bustling street food venture in Waterford City, is founded by Alistair Jeje who offers an enticing fusion of Caribbean and Nigerian flavours that play homage to his roots. Socafro brings vibrant flavours of Afro-Carribean cuisine together to create a unique menu fusing the bold, spicy flavours of the Carribean with the soulful, hearty dishes of West Africa. From mouth-watering jerk chicken to their savoury jollof rice, each dish will transport your taste buds to the tropics.
Socafro takes pride in sourcing ingredients from local suppliers, prepared with the utmost care to ensure the most fresh and most authentic dishes possible. Alistair joins Roe & Co in September ahead of the launch of his debut cookbook ‘Socafro’.
The Roe & Co Distillery Summer Garden is an over 18s experience. Tasting menus are priced at €45pp and the cocktail pairing menu is €35pp.

As we are supporting local restaurants, we will not be able to offer drinks only service in the garden during the food pop up period.
