Roe & Co Distillery Launch D-8te, A Summer of Food Partnering with Six Local Dublin Restaurants

Situated at the iconic former Guinness Power Station, in the heart of Dublin’s buzzing Liberties district, the Roe & Co Distillery will once again offer up their home this summer to local businesses. Roe & Co Distillery are collaborating with six local restaurants to bring an exciting line up of global tastes to their Dublin 8 Cocktail Village this summer. D-8TE is a unique, gastronomical experience that celebrates flavours from around the world.

Spitalfields, Pickle, Bahay, Nightmarket, Matsu and Lil Portie will be serving up mouth-watering set menus with big flavours, vibrant colours, exciting and playful dishes. Each menu will feature a unique curated Roe & Co whiskey cocktail pairing inspired by the variety of dishes. D-8TE is set to become this season’s must visit destination for the ultimate reunion with family and friends. Fun and flavour are at the centre of every aspect of the Roe & Co Distillery experience and D-8TE is no exception!

Kicking off the D-8TE experience at the home of cocktail exploration and modern Irish whiskey, is Roe & Co Distillery’s neighbour Spitalfields. The only pub in Dublin and Ireland to have been awarded a Michelin Bib Gourmand in the 2021 Michelin guide, Spitalfields is bringing a modern Irish picnic to the D-8TE Cocktail Garden. Chef Stephen McAlister will be serving up potted shrimp with devilled eggs and Goatsbridge trout roe on soda bread. Paired with Roe & Co whiskey cocktails, this menu is a picnic like you’ve never experienced before.

Camden Street favourite Pickle will be bringing the colours and heat of India to D-8TE with a menu of regional Indian dishes created by multi-award winning chef Sunil Ghai. Inspired by the flavours of home from Gwalior in Northern India, Sunil is the expert of spices. Influenced by his mother’s home cooking and his experience of working with the French chefs of the world-famous 5-star Oberoi group, Sunil is known for his intelligent use of blending Irish ingredients with sophisticated spicing. Pickle will be bringing an inventive and elegant take on authentic Indian food to the Roe & Co Cocktail Village this June. It’s a menu that will have your mouth watering from the aromas alone. Pickle’s Goat on Toast is a flavour punch not to be missed!

Chef Richie Costello,  is no stranger to Dublin 8 after his time spent cooking at Bastible and Clanbrassil. He will be bringing Filipino flavours to D-8TE, showcasing the food he grew up with, with his brand new pop-up, Bahay. Pairing Filipino flavours with Irish ingredients, Richie says Filipino food and culture is indivisible so he is excited to bring this to life with big, bold, zingy flavours at D-8TE. Catch Richie at the distillery this July where you’ll fall in love with his hero dish, Inihaw na Manok.

Ranelagh’s Nightmarket will join the line-up with an exciting regional Thai menu. Heading up the kitchen will be Jutarat Suwankeeree, also known as ‘R’. She will be serving rustic food of Chiang Mai, and spicy seafood dishes of Hua Hinwhile using as many local, Irish ingredients as possible. The vibrant colours and spicy Thai flavours are the perfect inspiration for Roe & Co whiskey cocktails. Nightmarket will be in residence at D-8TE at the end of July where hero dish Miang kham will be the talk of the cocktail garden.

Matsu Ramen will be bringing a real taste of Japan to D-8TE. Sushi and Ramen expert Ken Komatsu, is one of few Japanese chefs in Ireland with extensive experience in Washoku, the traditional way of cooking healthy and savoury Japanese food. It’s no surprise that he was appointed Head Sushi Chef at Dublin’s high end Japanese restaurant Taste at the Bonsai. Recognising that Ireland lacked authentic Japanese Ramen, Ken decided to start his own business Matsu Ramen. Ken will be bringing the very best Sushi Moriawase and most flavoursome Ramen to D-8TE this August Inspired by his granddad’s own ramen restaurant in Yamagata, Japan.

Closing out the summer is Nico Reynold’s Lil Portie and his Caribbean menu with a Latin twist, using plenty of locally sourced Irish ingredients. Chef Nico learnt about the depth of flavour and the variety of spice in Caribbean cooking and soul food from his Grandmother. Bringing this knowledge to Latin American he ran a small restaurant in Buenos Aires for 6 years before bringing these flavours home to Ireland. Nico brings an energy to his cooking that is not to be missed, nor is his Cuban mojo pork patacones with crispy black pudding, using his granny’s secret sauce! Check him out at D-8TE late August.

Supporting local has never been more important and Roe & Co is proud to play their part supporting their foodie neighbours of Dublin City. Six amazing restaurants to try, a different one each fortnight, offering set menus priced at €40 per person, with the opportunity to explore curated Roe & Co whiskey cocktail pairings at €30 per person.
