WILDE at The Westbury once again invites guests to sample a curated selection of exquisite rosé wines from the South of France, serving a taste of Provence in Dublin City
From now until September, WILDE at The Westbury will celebrate summer with an exquisitely curated menu of some of the finest rosé wines from the South of France. Perched above Grafton Street, the elegant terrace will be decorated with delicate pink blooms designed by The Westbury floral team, creating the perfect setting for guests to enjoy the Everything’s Rosé tasting experience.
WILDE’s exclusive Flight of the Rosé tasting experience, €30, includes a 75ml pour from each of the three rosés from the collection: Gérard Bertrand Gris Blanc Rosé, with its crystalline colour and luscious fruit (normally priced at €10.50 per glass, €42 per bottle), Hampton Water Rosé, created by the Bon Jovi family and exclusive to WILDE (€18 per glass, €70 per bottle), and the certified organic Château La Sauvageonne La Villa Rosé from Gérard Bertrand, a two-time winner of the Best Rosé in the World award by The Drinks Business (€32 per glass, €125 per bottle). You will be guided through the notes of each pour in this unique tasting experience, offering the perfect opportunity to sample a taste of Provence in the heart of Dublin. Each wine has been carefully selected and curated by The Doyle Collection’s Group Sommelier, Philip Dunne.
“We are absolutely delighted to bring back the ever-popular Everything’s Rosé menu again for 2021, with the addition of launching a brand new and exquisite selection of wines celebrating the very best of rosé from France,” says Philip Dunne, Group Sommelier for The Doyle Collection. “Exclusive additions to our menu this year include the certified organic Château La Sauvageonne La Villa Rosé and the elegant Hampton Water Rosé, made in the South of France by Jesse Bongiovi, the son of rock legend Jon Bon Jovi. Our sun-filled terrace is delicately dressed with a backdrop of roses and foliage, offering the perfect environment to while away the time and indulge in our gorgeous rosé wines this summer.”
The Everything’s Rosé menu also features the classic Le Bijou de Sophie Valrose from the Languedoc, available in single glass serves, €11, or by the bottle, €44; plus four exquisite rosés from the WILDE collection, available by the bottle: Miraval from Provence (€75 per bottle), Rock Angel from Provence (€135 per bottle), Château d’Esclans Les Clans (€195 per bottle), and Muse by Miraval (€350 per 150ml magnum bottle).
The new menu for summer 2021 also features a selection of sparkling rosé wines and champagne, including Rosé Prosecco, Ca’ di Alte (€13 per glass, €59 per bottle), Moët & Chandon Rosé NV (€140 per bottle), Laurent-Perrier Rosé NV (€150 per bottle), and Krug Rosé NV (€495 per bottle). Following the recent announcement of Charles Heidsieck as the new house Champagne at The Westbury, those looking for an incomparable glass of rosé Champagne can look forward to sampling Charles Heidsieck Rosé NV (€25 per glass, €120 per bottle). For guests looking for an alcohol-free option, Leitz Eins Zwei Zero Sparkling Rosé (€8 per glass, €32 per bottle) offers a refreshing way to join in the celebration.
This summer’s Everything’s Rosé cocktail offering features four specially created pink cocktails, three of which incorporate WILDE’s selection of rosé wines – the Hampton Cosmo, €15, featuring Hampton Water Rosé, Absolut Citrus Vodka, lemon, pomegranate, and agave; A Bijou Cup, €14, made from Le Bijou Rosé, raspberry, rhubarb, mint, and cherry tonic; and Lillet Rosé Spritz, €13, a blend of Lillet Rosé, classic tonic, lime and strawberries. The fourth cocktail – the Summer Rosé G&T, €14 – is a mix of Blackwater Irish Strawberry Gin, elderflower, cherries and cherry tonic. The menu also features a refreshing selection of pink beer and cider.
