Executive Chef Alberto Rossi of the InterContinental Dublin doesn’t do things by half and is currently in Alba in Italy at the World White Truffle Market, choosing and purchasing white truffles to embellish the dishes at the hotel.
The Alba White Truffle World Market is the undisputed protagonist of Alba’s autumn season. Situated in the historic city centre, il Cortile della Maddalena, you can buy and appreciate truffles from the Langhe, Roero and Monferrato woods.
October marks the start of white truffle season and they are only available a couple of months of the year, almost exclusively from this part of Italy, and the truffles must be foraged by special pigs.
White Truffles are the perfect luxury commodity and a precious addition to a dish. With this in mind, guests dining at Seasons’ Restaurant at InterContinental Dublin will be able to purchase White Truffle to add a luxurious finish to selected dishes.
There will also be a few specials on the menu featuring the White Truffle, including Risotto Oro e Tartufo, a delicious Risotto served with 24 carat gold leaf and White Truffle. There is also a house-made Tagliolini Pasta with Mushroom and fresh grated white truffle.
There is a €38 Surcharge for fresh Grated White truffle at the InterContinental Dublin, a small price to pay for the ultimate White Truffle Treat.
