Warm Black Rice Salad Recipe by My Nutrition with wine pairing

This amazing looking dish will have people quite impressed at the dinner table. It looks so stunning, almost Michelin Star quality food but super easy and quick to prepare. This is a “Warm Black Rice Salad“, absolutely gorgeous and delicious. Black rice is extremely nutritious. An ancient gluten free grain with impressive health benefits. So if you haven’t yet included it yet as part of your healthy eating diet, get it and try it! A highly nutritious food to enrich your weekly diet.

Health Benefits: One serving of black or “forbidden rice” contains only around 160 calories but offer high amounts of flavonoid phytonutrients, a good source of fibre, substantial mineral content of iron, copper and a great source of plant based protein. The outside hull of the grain has one of the highest levels of anthocyanin antioxidants than any other food. An excellent anti-ageing food!

Ingredients

(4 servings)

1 cup of black rice
250gr peeled prawns
Sea salt
Dressing:
1 Tbsp Soy sauce
1 Tbsp Honey,
1 Tbsp Rice Vinegar (or any)
1 Red chilli, finely chopped
1/2 garlic clove, crushed
Spring onions, finely chopped
Coriander, finely chopped (optional)

Method

1. Just cook 1 cup of black rice in 2 cups of water with a pinch of sea salt, like you would cook any other rice, 10-15 minutes approx.
2. Then in boiling water with a pinch of sea salt boil peeled prawns from 3-5 minutes.
3. Then mix all ingredients for the dressing in a separate bowl. Assemble your dish with the black rice, prawns and dressing and garnish on top.

Done! Enjoy this easy, stunning and powerful salad.

My Nutrition’s Tip

You can serve this dish with any of your favourite proteins like fish, turkey, chicken, etc. Also delicious with any vegetables or tofu for vegetarians & vegans. Add some roasted cashew nuts, almonds or peanuts for extra crunch and favour. The dressing will be even more tasty if you a teaspoon of sesame oil. This recipe is perfect warm or cold, as a starter or main meal. Buen apetito!

Melon de Bourgogne
This wine has a wonderfully fresh nose with quite a lot going on. Notes of gooseberries, almonds and a little grassy.
On the palate this wine is crisp and ripe with the aromas from the nose mixing delightfully with the light mineral undertone finishing with a faint note of freshly cut grass.
This wine will pair well with this dish as the fruit notes will make the prawns sing and the mineral tone working with the earthy tone of the black rice.
