Vegan Orange & Cinnamon Cookies Recipe by The Honest Project

Winter Orange and Cinnamon Cookies

These cookies are perfect for this time of year. The cinnamon and orange provide beautiful warming winter flavours, perfect for curling up on the couch with a cup of tea. These cookies are dairy free, refined sugar free and can be gluten free if gluten free oats are used. If cinnamon isn’t your cup of tea, swap it out and add a tablespoon of ground ginger instead. They cookies are a little crunchy on the outside but beautifully chewy on the inside.

– 1 tablespoon of flaxmeal (ground flaxseeds)
– 3 tablespoons of water
– 1 cup of ground almonds
– 1 cup of oats
– ¼ cup of maple syrup
– Zest of an orange
– 1 tablespoon of orange juice
– 1 teaspoon of cinnamon
– 1 teaspoon of vanilla extract
– Pinch of sea salt

1. Put the flaxmeal and water in a bowl and mix well. Set aside for 5 minutes while preparing the rest of the ingredients.
2. Add the ground almonds, oats, orange zest, cinnamon and sea salt to a bowl and mix well.
3. Add the maple syrup, orange juice and vanilla extract to the dry ingredients in the bowl and using a wooden spoon mix until a dough forms.
4. Line a baking tray with baking paper and preheat the oven to gas mark 4/180 degrees celsius.
5. Divide the cookie mixture into twelve little balls and place on the lined baking tray. Using a spatula, press the balls of cookie dough into round cookie shapes and place in the oven for about 25 minutes until lightly browned.
6. Remove from the oven and place on a wire rack to cool.
If you manage not to scoff the lot in one go, store in an airtight container for up to six days.
