The evening will begin with a champagne reception at 7pm, where guests will be served Charles Heidsieck Brut Réserve NV alongside a canapé of Carlingford rock oyster and ceviche. Dinner will follow at 7.30pm with a five-course pairing menu beginning with a shellfish cocktail of Dublin Bay prawns, Castletownbere crab salad and poached gambas with pickled cucumber served with Chateau Montelena Potter Valley Riesling 2019, followed by roasted halibut with potato mousseline and chardonnay cream paired with Chateau Montelena Chardonnay 2019.
