The food philosophy at The Marker is straightforward menus that celebrate the superb quality ingredients that have been meticulously sourced by Gareth Mullins, with a special emphasis on local producers as much as possible.

Designed by Portuguese “starchitect” Emmanuel Aires Mateus, the hotel is a design hotel in every sense of the word. The architecture was inspired the elemental nature of the Irish landscape, the design references the primordial rock landscape of Ireland, areas such as the Giant’s Causeway, the Burren and the Irish Coastline itself. This is best seen in the eroded spaces of the cavernous ground floor, which echo the passage of time, of water wearing down ancient rock formations to create a sequence of flowing public spaces from bar to reception to the Brasserie.

This unique contemporary design is carried through to the unique geometric layouts of their 187 bedrooms, to the stunning Rooftop Bar & Terrace, reaching across the cityscape to the stunning natural beauty of the mountains and the sea.
Their stunning Spa & Wellness boasts a 23 metre infinity pool – a genuine sanctuary for any guests and a rare find in such a central city location. The Marker’s conference and events facilities contain nine adaptable spaces with capacities ranging from 20-250 guests depending on use and configuration.

Le Drunch in The Brasserie
The Marker Bar exudes its own unique style and ambience. Modern, fresh and totally laid back, it draws an eclectic mix of people through its doors. It buzzes from early in the morning until long past sundown, it is a bar for meeting, socialising, working or chilling out.

Gorgeous features of The Marker Bar include a feature fire to cozy up beside, a long work bench with docking points perfect for meetings or catching up on work and their outdoor terrace area, a great people watching spot!

The gastro pub style menu has all the classics, created with a delicate finesse that Gareth Mullins and his team are becoming renowned for. It sits alongside an extensive cocktail, wine and craft beer list, sourced from near and far.

Reaching out over the city, two steps away from the clouds, The Marker Rooftop Bar and Terrace sums up the Hotel’s personality – stylish, understated and distinctly different. There is no other outdoor bar in Dublin city that matches beautiful views from The Marker Rooftop. There is a mix of intimate and social areas that seamlessly blend indoor and outdoor space giving the Rooftop Bar and chilled out, easy vibe.

An excellent list of expertly curated cocktails, that like The Marker’s food menus changes with each season to ensure the freshest ingredients are used and flavours to match the season. Executive Chef Gareth Mullins

Gareth Mullins is responsible for all menu design and food preparation in The Marker Hotel’s four kitchens which covers the Brasserie, the Rooftop Bar and Terrace, The Marker Bar, the conference and events space and in-room dining. With over 16 years’ experience cooking in five star hotels in Ireland and Australia, Gareth spent seven years in the Merrion Hotel, where he was Head Chef in The Cellar Restaurant & Bar. During his tenure at The Cellar, the restaurant received two AA rosettes and the bar was recommended in the Michelin Guide.

Gareth is a regular chef on TV3’s The Seven O’Clock Show, previous to that Late Lunch Live, he has also done guest interviews on radio shows with Pat Kenny, Tom Dunne, Q Radio and the international travel detective Peter Greenberg.
Gareth is hugely passionate about local, artisanal produce, he loves discovering new and upcoming Irish producers and using the hotel to showcase these exciting ingredients. The seasons influence his cooking the most as well as the challenge of being diverse and staying current.
