The Lodge at Ashford will host 1826 Adare’s Chef Wade Murphy for a Night to Celebrate the Cong Food Village Festival

The Lodge at Ashford Castle will welcome chef Wade Murphy of 1826 Adare for a one night only dinner on June 5th in celebration of the Cong Food Village Festival. Wade is no stranger to The Lodge, as he performed as Head Chef in their kitchens between 2007 to 2010 and  a decade later, he’ll go back to prepare a special five course menu alongside Head Chef and Chairperson of the Cong Food Village Festival, Johnathan Keane and the team at The Lodge at Ashford Castle.

The event will begin with a Prosecco reception at 6:30 pm followed by dinner in the ballroom at 7:00 pm. Guests will enjoy a selection of canapés showcasing the distinctive 1826 Adare style including beetroot with goat curd and hazelnut, pigs head croquette with gooseberry compote and monkfish scampi served with tarragon mayo.

Chef Wade Murphy will share his favourite Irish ingredients through seasonal dishes including cured and marinated organic salmon with cucumber, avocado, wasabi and sesame and a melt-in-the-mouth treacle braised beef short rib, with asparagus, horseradish and spinach.

Head Chef Jonathan Keane and the team behind Wilde’s at The Lodge at Ashford Castle look forward to welcome Wade and to celebrate Cong Food Village Festival.
