The Square Table in Cork is Named Just Ask Restaurant of The Month For December

Selected by food writer Georgina Campbell and Bord Bia, the Just Ask Restaurant of the Month rewards eateries across Ireland that exhibit best practices in showing transparency in the sourcing of the food on their menus. This month, the prestigious title has been awarded to The Square Table in Blarney, Co. Cork.

Owned and run by twin sisters Martina and Tricia Cronin, The Square Table focuses on choosing suppliers from among local, artisan, small businesses who are as passionate about food as they are.

They use their website and menu to introduce the sourcing philosophy and ethos at The Square Table, saying: “As with all good places to eat in Cork, in order to meet our high standard of food we rely on good ingredients, produced locally where possible. Our menus vary depending on the season and we have daily specials that also take advantage of what’s in season to produce fine dining without the frills.”

Describing their impressive list of suppliers, they explain: “Our fresh meat and chicken suppliers include Michael Twomey, McCarthy’s of Kanturk and Tom Durcan at the English Market. Wild boar and venison is sourced from Ballinwillin House Farm of Mitchelstown and charcuterie from Gubbeen Meats in West Cork. Fresh fish and seafood is supplied by K.O’Connell Fish Merchants at the English Market, Old Mill Bank Smoked Salmon and Liscannor Crab.”

Kilbrack Farm, Annabella Farm, Dripsey Farm Fresh and Ballyhoura Mountain Mushrooms supply us with our vegetables and salad leaves and our range of Irish farmhouse cheeses includes Hegarty’s, Coolea, Macroom Mozzarella, Toonsbridge Dairy, Bluebell Falls, Gubbeeen and Cashel Blue.

“Our eggs are sourced from O’Briens Eggs in Whitechurch. We also use Longueville House apple brandy through our cooking and Follain Preserves for our jams.”
