The popular Gables Restaurant in Foxrock village is getting ready to serve up a sunny helping of Spanish flavoured Springtime. Taking the opportunity to revamp the “locals’ favourite” while having a new state-of-the-art kitchen fitted, owners and well-known wine merchants Jim and John McCabe are putting the finishing touches to the addition of a new Tapas Bar due to be launched in early April.
Head Chef Luis Casero is passionate about sharing his native Spanish influences in his signature dishes and the The Gables Tapas Bar is the result of his vision of expansion of European dishes at the restaurant and in particular the clean, authentic flavours of Iberian cuisine.
Luis is modest about his culinary past though it was during his time at the famous El Patio Restaurant in Spain that it received its Michelin Star. From there he moved to Marbella to the Marbella Club Hotel. “I had a desire to experience other European cultures and moved to the Michelin starred Auberge des Abers in France” says Luis. “From there I had planned to spend some time in London” he says. It was at this point fate stepped in as he took a brief stop off in Dublin en route and fell in love with the lively city. He has been working as head chef at The Gables since 2009.
From the start of his career in his family owned restaurant in Asturias in northern Spain to his current position in the cosmopolitan, suburban restaurant, Luis is forever expanding his menus and influences. The Tapas Bar promises to be an exciting addition.
“Our customers can expect to experience authentic Spanish Tapas as well as Luis’s Mediterranean cooking at prices which provide superb value compared to city centre venues” said Jim McCabe. This, along with a carefully crafted wine list and the wealth of wine knowledge the McCabes bring to their customers, makes dining at The Gables an occasion worth experiencing.
