Thursday 20th July saw the launch of the new Woodlock Brasserie at the award winning Citywest Hotel, in Saggart, County Dublin, with the Wicklow mountains providing a stunning backdrop for this new addition to the Dublin dining scene.
The four star hotel, which recently unveiled the most recent phase of its newly refurbished premises, played host to an intimate gathering of foodies to showcase the culinary expertise and taste sensations diners can expect at The Woodlock Brasserie.
Guests indulged in a seven course meal by award-winning Executive Head Chef, Ciaran Cunningham, and Woodlock Brasserie Head Chef, Jeff Norman. The menu offered guests the chance to explore an exquisite culinary experience, which included wild mushroom cappuccino soup and roast hake, grilled seabass with crab & pea risotto, as well as a trio of decadent desserts.
Many of the ingredients were sourced from Irish producers from around the country and guests were surprised to hear that some of the ingredients were foraged by hand from the idyllic grounds surrounding the Brasserie. Guests enjoyed course after course of seasonally driven dishes, artfully plated and thoroughly enjoyed by all.
Sommelier, Declan Saunders, of Tindall Wines, paired a selection of both red and white wines from different regions of France to perfectly accompany the flavour combinations of each course. A fine port accompanied the decadent cheese board which included a selection of both Irish and European cheeses, along with fresh fruit and artisan crackers.
String quartet, Stringology, performed a mix of soothing classical music along with more contemporary pop and rock songs, creating the perfect ambience for guest to chat and mingle. The event featured a stylish mix of well-known faces including model, Roz Lipsett, and socialite, Avila Lipsett, lifestyle bloggers, Dominique Nugent and Grace Mongey, as well as Xposé stylist, Sonja Mohlich.
