Home to one of the largest indoor malls in the world, one of the biggest aquariums, the biggest automated fountain, the tallest hotel and one of the largest indoor ski slopes, This week, in episode six, Tastes Like Home is a little more spicey as it looks back at Catherine’s time in Dubai.
In this new eight part series Catherine Fulvio visits families across Ireland who show her how to make their favourite family dishes, before travelling to locations around the world to recreate these “Tastes Like Home” for family members now living abroad. In this episode Catherine will show viewers how to cook a number of middle eastern flavours, Hummus, Tabbouleh, Baba Ghanoush with Flatbreads as well as Almond Cardamom Rosewater Cake.
On Monday October 12th, Catherine Fulvio looks back at her trip to Navan and Dubai meeting cousins Lynda Gibbons and Aoife Baxter both from Navan as well as creating new dishes based on the flavours that she tasted during her visit Middle Eastern adventure. Catherine said of her Dubai experience, “When I think of Dubai, after I recovered from the thrilling desert safari, my first memory is the intense heat, my second is the aromas of the spices in the souks! I love cooking with spice and to see the huge choice available – in sacks rather than the little jars we are used to, I just wanted to wheel up my suitcase and fill it with the crazy array of flavours.”
Lynda Gibbons lives in Navan with husband William and daughter Sophie, Aoife Baxter has lived and worked in Dubai for nearly over 10 years and loves it. With only three days between Lynda and Aoife in age they grew up more like sisters than cousins and would spend their free time together. Aside from missing family and friends back in Ireland it’s “pork” Aoife craves so when she’s back in Ireland she’d eat pork every day given the chance.
In the original episode Lynda and Catherine whip up Aoife’s favourite pork dish Medallions of Pork in a White Wine and Mustard Sauce served with Champ but when Catherine heads to Dubai to teach Aoife how to make it however Catherine chooses to respect the Muslim culture and tweaks the dish. Linda Gibbons, said of the experience, “Tastes like Home was a wonderful experience and I enjoyed sharing my family and home with Catherine Fulvio.” Linda Gibbons
In Dubai Catherine took an “abra” a traditional boat across the creek to the Souks – to shop for spices, fish, fruit and vegetables. Souks are the traditional Arabic market places where goods are bought and sold. No visit to Dubai would be complete without a trip into the Arabian desert, so Catherine went “Dune Bashing” driving 4×4 jeeps up and down the sand dunes at speed, as the sun set Catherine enjoyed a delicious barbecue dinner watching belly dancers performing a show under the stars in the dessert. Did she do any of this with Aoife? ( YES they did )
“It’s all too easy to get swept along with day to day life and not take the time to stop what I’m doing and appreciate the amazing city I’ve made my home. Even after so many years here, Dubai still takes my breath away. It was a pleasure showing Catherine around some of my favourite places and welcoming her into my home”, said Aoife Baxter in Dubai.
Over the eight episodes Tastes Like Home revisits Cape Town and Johannesburg in South Africa, Vancouver and Tiny Township in Canada, San Sebastián and Barcelona in Spain, as well as Dubai & Portland, Oregon to capture eight individual stories, from contestants who refuse to let the physical distance from home curb their appetite for home-cooked meal that “Tastes Like Home”.
