Red Velvet Pancakes ‘Breakfast in Bed’ Recipe by My Nutrition

Breakfast in bed is one of the ultimate ways to pamper someone special and Valentine’s day is just one of those perfect days when you want to do something out of the ordinary, taking the time to get up and prepare a delicious treat for her or him, to show loved ones how important they are.

Delivering a heart-warming breakfast on a very cold morning in February is definitely a morning they won’t forget. There’s something especially luxurious about waking up to a tray of delicious food to ease you into the perfect start of any day.  No need to climb out from under the covers, just tuck a napkin in your nightgown and feast away.

It does take a little planning to pull off a perfect breakfast in bed, however. You have to check that the person you’re pampering doesn’t have anywhere to be very early in the morning, in this case leave it for the weeken. Furthermore, if someone’s watching their waist, don’t bring in a tray bursting with high-calorie sticky buns and bacon.

This delicious recipe for the perfect Valentine’s morning is carefully design to cater for a guilt free breakfast. ‘Red Velvet Pancakes‘ Sound luxurious and sinful enough and the colour alone in these pancakes are a show stopper. Make sure to practice and test the recipe before the special day, it’s also a perfect excuse to try these luxurious pancakes on your own any day of the week. It also allows you to add a special touch to the occasion, tuck a card beneath the napkin, or include the sports or business section of the newspaper for a lucky man or flowers, pearls and jewellery for the perfect lady.

Valentine’s morning is the perfect excuse for indulgence, you’ll wish every day was a special breakfast-in-bed day. After all, isn’t the way to anyone’s heart through their stomach? Red Velvet Pancakes

Serves 6-8 pancakes


– 1 ½ cups wholegrain flour or oat flour*
– 3 tsp baking powder
– 1 tsp baking soda
– Pinch of sea salt
– 1 tbsp unsweetened cocoa powder
– 1 cup of buttermilk (coconut yoghurt or milk for dairy free)
– 1 egg beaten (or 1 mashed banana for vegans)
– 2 tsp vanilla extract
– 2 tbsp coconut oil
– 2 small beetroots, grated (or use 2 tsp natural red colour paste)
– 1 tbsp apple cider vinegar or red wine vinegar ** ( only if using coconut yoghurt/ milk)


1. Blend buttermilk with grated beetroots with a hand blender or food processor until completely smooth. Combine with vinegar, eggs, vanilla and oil.
2. In a separate bowl sift and combine all the dry ingredients.
3. Mix dry and wet ingredients until combined, do not over mix.
4. Heat a non-stick frying pan over medium to high heat, thinly spread a bit of coconut oil, or any oil with a kitchen paper towel. Make sure the pan it’s really hot before pouring the pancake batter, to ensure they won’t stick to the pan.
5. Cook 2 tbsp of the batter per pancake, spreading carefully with the spoon to make a circle, to make fluffy American pancakes don’t spread them too much. Cook on medium to low heat to keep their perfect red colour.
6. Cook for 2-3 minutes on one side, then flip carefully with a spatula, then cook 1-2 minutes on the other side. To keep them bright red, ensure that the heat is low and you might have to be patient to cook them an extra minute in each side. Done!

Our serving suggestions are: Yogurt combined with a little bit of vanilla, honey or maple syrup and plenty of your favourite berries, extra drizzle on top of syrup or honey for the naughty ones.

Takes time to perfect this recipe so don’t be shy to test them a few times before hand. You could make crepes out of the same batter just add extra milk to make a thinner batter.

*To make oat flour just blend oats in a food processor until very fine.
** For dairy free pancakes use coconut yoghurt/milk with a tbsp of vinegar. The vinegar activates the baking soda to make pancakes very fluffy.
