This Madeleines Recipe is delicate, buttery and delicious! So now that berry season is here get yourself some raspberries and make these Delicious Raspberry Madeleines.

Raspberry Madeleines Recipe..

200g butter (a little extra for greasing tins)
3 eggs
130g caster sugar
60ml milk
1 heaped tbsp honey
Zest of 1 lemon
200g flour (a little extra for flouring tins)
2 tsp baking powder
1 punnet raspberries

Madeleine tin

1. Melt the butter and set aside to cool.
2. Beat the eggs and caster sugar until they become light and airy.
3. Mix the milk, honey and the cooled melted butter. Add this mixture to the eggs and combine.
4. Sift the flour and baking powder together into a separate bowl, then mix in the lemon zest.
5. Fold the flour into the batter in two batches. Be firm but gentle when folding, you need to capture as much air as possible to make the madeleines light and delicate, whilst also
making sure all of the dry ingredients are well incorporated.
6. Cover your batter and leave it to rest in the fridge for at least a couple of hours or even overnight.
7. When your madeleines are nearly ready to be baked prep your tins by greasing with butter and sprinkling a little flour in each shell to prevent them from sticking during the bake. Preheat your oven to 190℃.
8. Spoon your batter into the shell tins and pop a single Raspberry into each one.
9. Here comes the tricky bit! Bake the madeleines for 5 mins. Turn the oven off for 1 min. Turn the oven to 160℃ and bake for another 5 mins.
10. Remove the madeleines from the oven, leave to cool. Pop them out of the tins, dust with icing sugar and impress everyone that has a taste. Enjoy!

Eva began baking as Delicious Circle in 2015, creating custom cakes using fresh flowers, fruits, nuts to make tasty treats that look as good on the outside as they taste on the inside. In 2016 she became the first baker to have her recipes featured on Food Bites on the RTE Player. www.deliciouscircle.ie
