Probiotic Berry Ice Pops Recipe by Roz Purcell

Made simply with natural probiotic yoghurt, honey, lemon juice and berries these Probiotic Berry Ice Pops are a healthy ice cream dupe! Shh, don’t tell the ice cream man!

Makes four ice pops

Ingredients:

– 250g natural probiotic yoghurt
– 2 tbsp honey or maple syrup
– 1 tbsp freshly squeezed lemon juice
– 2 handfuls of fresh strawberries, hulled and chopped, or other chopped fresh berries

Method:

1. Mix the yoghurt, honey and lemon juice in a large Pyrex jug.
2. Divide the chopped fruit between four ice pop moulds, then top up with the yoghurt and insert an ice pop stick.
3. Place in the freezer for 3 hours, until frozen solid.
4. To remove the frozen ice pops from their moulds, fill a deep bowl with hot tap water and quickly dip the moulds in the water to help loosen them.
