This year’s CLIFF Oyster Festival will run throughout the month of September and as part of this festival, an evening of fine food and music is taking place.
On 2nd September, Cliff at Lyons will hold a special Opera & Oyster dinner with internationally acclaimed lyric soprano Celine Byrne.
The Kildare native made her operatic debut as Mini in La Bohéme in 2010 and has enjoyed continued success ever since.
Celine has performed all around the world with renowned tenors such as José Carreras, Roberto Alagna and Andrea Bocelli. She has also performed for President Barack Obama, HRH Queen Elizabeth, Pope John Paul II and Pope Benedict.
Set in a beautiful eighteenth-century village, Cliff at Lyons is an idyllic rural setting, making it the perfect location for this theatrical dinner.
On arrival, guests will enjoy a glass of Champagne in the picturesque gardens of Cliff at Lyons while Celine performs some of her favourite arias.
Following on from this intimate performance, attendees will sit down in The Mill restaurant to enjoy a specially created menu by Head Chef Nathan Diamond.
This elegant menu includes mouthwatering snacks of Oyster Tempura and Oyster Vichyssoise. Starters at the dinner will feature Char Sui Pork Belly, Kelly’s Native Oyster and Beetroot Dashi.
For the main course, guests will have a tough choice between East Coast Mackerel with Scallop Mousse, Girolles and Oyster Bonne Femme or 12 Hour Smoked John Stone Beef with BBQ Oyster Jus, Hasselback Potatoes and Caramelised Onion Ketchup.
To finish the meal, guests will enjoy a dessert of Strawberry Jelly, Double Bourbon, Vanilla Ice Cream, Ponzu, Sea-Vegetable Salad and Champagne Jelly.
