Molten Giant Peanut Butter Cookie Recipe by Darina Coffey

This molten giant peanut butter cookie recipe can be neatly described in one word – sinful. Crunchy on the edges, gooey in the middle and oozing with peanut butter, it is a hybrid between a cookie and a pudding and just begs to be topped with ice cream. This is the perfect sharing dessert for two, but be warned – spoon wars are a distinct possibility.

Ingredients:

115g butter
150g brown sugar
50g caster sugar
1 egg
1 tsp vanilla extract
250g dark, milk or white chocolate, chopped
180g plain flour
1/3 tsp bicarbonate of soda
100g smooth peanut butter

To serve: Ice cream and chocolate sauce

Method:

1. Preheat the oven to 170c.
2. Melt butter over medium high heat in a sauce pan until it froths and starts to turn golden brown. Use the butter wrapper to grease an 8 inch cake tin.
3. Place both sugars in a bowl and pour over browned butter, mixing well – allow to cool for a minute or so.
4. Chop chocolate chunks roughly.
5. Add the egg and vanilla to the slightly cooled butter mix and incorporate well with wooden spoon.
6. Add flour, bicarbonate of soda and a pinch of salt and mix well.
7. Fold in 1/2 the chocolate chunks.
8. Take the 8 inch pan, grease and spread half the batter on the bottom.
9. Top this with a layer of peanut butter in the centre.
10. Cover this with the remaining batter, enclosing the peanut butter.
11. Sprinkle over the remaining chocolate chunks and place in the oven.
12. Bake for 20-25 minutes until slightly wobbly in centre and crisp on the outside.
13. Remove from oven and top with scoops of ice cream and chocolate sauce – optional but recommended!
