Last Wednesday 14th of March, Lough Erne Resort hosted an unforgettable wine dinner with the iconic California winery Ridge Vineyards, treating attendees to a delectable selection of eight courses masterfully paired with Ridge’s premium California wines.
The luxurious five-star hotel gave the spotlight to guest speaker David Amadia, Ridge Vineyard’s President, who shared the fascinating history of the winery and presented wine lovers to his world-renowned estate wines, exceptional single vineyards, and exciting range of new releases.
The dishes for the occasion were created by Executive Head Chef Noel McMeel and delivered by Executive Sous Chef Stephen Holland. The mouth-watering selection included Thornhill duck served with roasted artichoke, blackberry and buckthorn gel, fermented blackberries, toasted hazelnuts and a thyme jus paired with Ridge’s Lytton Springs; Kettyle beef cheek served with caramelised onion puree, lightly scented garlic potatoes, baby turnip beautifully paired with Ridge’s back vintage of its flagship Monte Bello; and Noel’s garden rhubarb served with a white chocolate parfait and rhubarb gel.
Guests enjoyed the opportunity to ask questions and mingle with David Amadia, while enjoying the exclusive wines shipped over especially for the event from Santa Cruz.
