Though sprouting up from Irish soil for a short time only, from just May until June, blink and you will miss Asparagus season in Ireland.
Making the most of the delicate flavour of these tender stems, InterContinental Dublin has created a seasonal asparagus menu which will be served from 12th – 20th May.
Executive Chef Alberto Rossi has created new dishes that pay homage to this unsung hero using asparagus sourced from Drummond House in Baltray, Co. Louth.
To start Alberto has combined this locally grown asparagus with truffled egg ravioli, or there’s sumptuous Irish salmon with white asparagus.
Following that there’s a juicy 6oz Irish beef fillet with grilled asparagus, sautéed morels and potato terrine in a Béarnaise sauce, or ‘John Dory’ with grilled radicchio and wild asparagus for the main course.
Guest can choose to enjoy the hotel’s seasonal menus in either the comfortable Lobby Lounge or the stylish the Seasons Restaurant.
